Sorry I’ve taken so long to reply.

So this is a recipe I kind of re-created from a stuffed apple version on the following site: http://www.thepaleodiet.com/nutritional_tools/recipes.shtml#Fruit%20and%20Desserts

    Baked Walnut-Cinnamon Apples
    3-4 Apples
    1/2 Raisins
    1/2 Teaspoon of Cinnamon
    1/2 Teaspoon Vanilla
    1/2 Cup Water
    1/4 Walnuts
    1/4 Pecans

Heat oven to 375. Chop up apples. In a baking dish add water, vanilla, apples, raisins, and nuts. Cover the dish with foil and bake for about 30 minutes. Apples should be tender when ready.

Note, the above measurements are just estimates. I kind of just used ingredients based on my taste. Feel free to be creative. You can alternate nuts, add more/less cinnamon – vanilla. I would think adding a little bit of nutmeg would make it pretty good too!!!

Oops, just noticed I missed something….add cinnamon over apples, raisins, and nuts in the dish. This should be the last step before covering in foil.
